Organic Gluten Free Banana Bread

This recipe is only sweetened with bananas and a small amount of raw honey and contains no refined sugar. This recipe can also be used to make banana muffins.

Ingredients
Wet Organic Ingredients

eggs
3
large, very ripe bananas, mashed

tbsp
vanilla extract
1
tbsp
raw honey
3
tbsp
coconut oil (or butter)
½
c
coconut milk (or milk or choice)

tbsp
lemon juice
Dry Organic Ingredients

almond flour

tsp
baking powder

tsp
sea salt

tsp
cinnamon

chopped pecans or walnuts, (optional)
Instructions
Preheat oven to 350 degrees.
Brush lead-free glass bread pan with organic coconut oil very thoroughly.
Mix wet ingredients: eggs, bananas, honey, coconut oil, coconut milk, lemon juice, and vanilla extract into bowl and mix well.
Combine dry ingredients: almond flour, baking soda, sea salt and cinnamon in a mixing bowl.
Combine wet and dry ingredients and stir until well mixed.
Pour into prepared bread pan and bake for 35-45 minutes until toothpick comes out clean.
