Organic Egg Bake with Mushrooms, Tomatoes & Spinach

tomatoes, chopped

baby fresh spinach, chopped

mushrooms, chopped

olive oil or coconut oil

sea salt

cheddar cheese, shredded
Instructions
Prepare Vegetables
Chop mushrooms, spinach and tomatoes.
Melt 1 tablespoon of olive oil or coconut oil in pan. Add mushrooms, cover and cook on low. Stir occasionally until tender (about 10 minutes).
Add spinach to mushrooms and cover with lid. Cook until spinach is wilted (about two minutes).
Assemble and Bake
Whisk together eggs, sea salt and pepper in a large bowl.
Brush 9 x 13 baking dish with olive oil or coconut oil on bottom and sides.
Add spinach, mushrooms, and tomatoes into egg mixture. Pour into 9x13 baking dish.
Bake approximately 40-45 minutes or until cooked throughout.
Add shredded cheddar cheese as soon as it comes out of the oven and allow to melt before cutting.
