These energy balls are full of nutritious ingredients that will nourish you and your family. Recommended as a healthy dessert or part of a post exercise meal.
⅔cuporganic peanut butter, almond butter or cashew butter
⅓cupshredded coconut flakes
2TBflaxseed meal (or flaxseeds ground in coffee grinder)
1TBchia seeds
1TB hemp seeds
2TBraw cacao nibs (optional)
1tsporganic ceylon cinnamon
⅛tsppink himalayan salt
⅓cupshredded coconut flakes, flax seeds, sesame seeds, or sunflower seeds to roll on the outside (optional)
Instructions
Add ½ cup of raw, dry oats into a food processor and pulse for a few seconds to make the oat pieces smaller. Then add to a large bowl.
Add remaining ½ cup of dry oats (whole) into the large bowl.
Add ½ cup of pecans and ½ cup of walnuts (or almonds) to a food processor and pulse for a few seconds until the nuts are chopped into smaller pieces. Then add into the large bowl.
Add pitted dates into the food processor and blend until smooth. Then add to the large bowl.
Add ground flaxseed, cinnamon, himalayan salt, peanut butter (or almond or cashew butter), ⅓ cup shredded coconut flakes, cacao nibs, chia seeds and hemp seeds to the large bowl.
Mix all of the ingredients very well.
Roll the oat mixture into tablespoon size balls and then (optionally) roll in shredded coconut, sesame seeds, flax seeds or sunflower seeds.
Store the Oat & Nut Energy bites in a glass Pyrex storage container and separate layers with unbleached parchment paper. Store in the refrigerator for up to a week. Freezer Option: You can store the Oat & Nut Energy bites in the freezer for up to 3 months. Thaw to room temperature before serving.
