These organic homemade protein bars are delicious and quick to make, and are excellent as a healthy dessert. See the Recipe Notes section for links to purchase the recommended brands of USDA Organic ingredients.
Add dates, protein powder, peanut butter, cinnamon, stevia drops and pink himalayan salt to food processor and and blend until smooth.
Add almonds and oats and pulse until you see the desired consistency of almonds and oats (not entirely smooth). Add raisins and pulse again to slightly chop the raisins.
Add parchment paper in the bottom of a square glass or ceramic pan.
Pour the mixture into the square glass or ceramic pan and spread flat and press together with your hands to the desired thickness for the protein bars, about 1/2" thick. If the bars are too dry and do not hold together, add a small amount more of peanut butter, almond butter or cashew butter and mix in food processor again.
Cut into protein bars and freeze for 1 approximately 1 hour (or until firm). Then wrap each protein bar in parchment paper.
Store protein bars in freezer. Take out of freezer for approximately 30 min-1 hour to thaw slightly before eating.
