This chicken fried rice is made in a healthy way, without frying the rice. This is very easy to make and my family really likes this meal. You can make this with organic brown rice or quinoa or cauliflower rice.Brown rice is known to contain arsenic, a heavy metal that accumulates and can cause health issues. If you would like to use brown rice in this recipe, I highly recommend purchasing brown rice that is tested for purity from heavy metals and glyphosate (Round-Up spray). OR4 cupsfrozen cauliflower rice + 1/2 cup bone broth
5largeeggs
16oz bagfrozen peas
4 large carrots, peeled and chopped
3 garlic cloves, minced
1largeyellow onion, chopped
2-3green onions, chopped
2TB olive oil
2-4TBcoconut liquid aminos
Chicken & Seasoning
2poundsboneless, skinless chicken
pink himalayan salt
smokedpaprika
garlicpowder
or spices of your choice
Instructions
Prepare Brown Rice, Cauliflower Rice or Quinoa
For brown rice or quinoa:Add 4 cups of bone broth to a large pot and boil. Add 2 cups of brown rice, (or quinoa) and cover and simmer on low flame. Cook brown rice for 45 minutes. Cook quinoa for 12 minutes. After cooked, turn off the flame and let it set for 5 minutes, covered.
For cauliflower rice:Add 4 cups of frozen cauliflower rice into a large pan with 1/2 cup of bone broth and cover and cook on low with a lid until cauliflower is cooked.
Prepare & Cook Chicken
Wash and dice the chicken breasts. Season the chicken with pink himalayan salt, smoked paprika, and garlic powder, or your spices of choice. Add olive oil and chicken to a large pan cook until thoroughly cooked.
Cook chicken on the stainless steel pan on the grill on low heat or in the oven until cook thoroughly.
Prepare Veggies for Rice
Chop onions and carrots into small pieces. You can alternatively add the onions and carrots and garlic into a food processor and chop into small pieces.
Add olive oil, carrots, onions, garlic and 1/4 cup bone broth into a large pan and cook on low/medium heat until soft, approximately 10-15 minutes.
Add a small amount of water and peas into a small pot. Cook until the peas are tender, according to package directions.
Add eggs to a bowl and whisk. Add butter to a large pan and cook the eggs on low/medium until cooked. Cut the eggs into small pieces.
After all of the veggies are cooked, add the eggs, carrots, onions, garlic, and peas to the cooked brown rice, cauliflower rice or quinoa and stir well.
Add 2-3 TB of coconut liquid aminos (or amount desired) into the brown rice, cauliflower rice, or quinoa with veggies mix and stir well.
Add the rice or quinoa with veggies into bowls and top with diced chicken. Add coconut liquid aminos for flavor as needed.
