This broccoli salad recipe is an easy side dish to make! Tangy, refreshing, and full of yummy sweet and salty flavor, it's a healthy version of classic Broccoli Salad, made with home made mayo. This recipe does not include any refined sugar, meat, or dairy.
1poundorganic broccoli, washed and chopped into ½" pieces
⅓cupred onion, diced
⅓cupraisins, cranberries, or chopped dried apricots
Homemade Broccoli Salad Dressing
3TBextra virgin olive oil
1 ½tspfresh lemon juice
¼cupraw, unsalted cashews or pistacios
1-2garlic cloves
½tspgarlic powder
¼tsponion powder
¼tspsea salt
pinchpepper
2TBwater
1 TB+ 1 tspapple cider vinegar
2 ½tspdijon mustard
2tspmaple syrup
Smoky Almond & Pumpkin Seeds
½cupraw, unsalted almonds
½cupraw, sprouted pumpkin seeds
1TBcoconut liquid aminos
½tspmaple syrup
¼tspsmoked paprika
Instructions
Preheat oven to 350 degrees.
Chop the broccoli into ½ inch pieces and add to a large bowl.
Chop the red onion and add to the broccoli.
Add the raisins, cranberries or chopped dried apricots to the broccoli and onions.
Add the almonds, pumpkin seeds, coconut liquid aminos, maple syrup and smoked paprika into a small bowl and stir well.
Brush a stainless steel pan with olive oil and pour the almonds and pumpkin seed mixture onto the pan in a thin layer. Bake for 14 minutes until golden brown and cool.
Add all of the ingredients for the homemade Broccoli Salad dressing into a blender and blend. Pour the homemade dressing into the broccoli salad bowl and stir well.
If you like your broccoli salad a little sweeter, you can add 1 additional teaspoon of maple syrup.
Add the almonds and pumpkin seeds into the broccoli salad and mix well. Reserve some of the mixture for topping the salad.
This salad will last for 5 days in the refrigerator.
