Asian Kale Slaw with Ginger Peanut Dressing
This is a delicious asian slaw recipe made with healthy, nourishing ingredients, and without any refined sugar.

SALAD INGREDIENTS

kale, thick stems removed (or spinach), chopped

cups
shredded red cabbage
2
cups
shredded carrots
1
red
bell pepper, chopped (optional)

cup
raw almonds, chopped
½
cup
fresh cilantro, chopped
DRESSING INGREDIENTS
¼
cup + 1 TB
creamy peanut butter

TB
unseasoned rice vinegar
1
TB
fresh lime juice (can substitute with lemon)

olive oil
1
TB
coconut liquid aminos
2
tsp
raw honey
2
TB
water
2
large
garlic cloves
1 inch
square
piece of raw ginger

tsp
himalayan sea salt
⅛
tsp
red pepper flakes
OPTIONAL TOPPINGS

sesame seeds

green onion, chopped
Instructions
Chop the kale (or spinach), cabbage and cilantro and add to a large bowl.
Add 3-4 large carrots to a food processor to chop the carrots and add to the large bowl with kale and cabbage.
Add the almonds to a food processor to chop and add to the salad bowl with the other veggies.
Add all of the dressing ingredients (except sesame seeds) into a blender and blend well.
Pour the dressing onto the slaw and mix well.
Add optional toppings of sesame seeds and green onions.
