Vegan Cashew Mayo

Delicious and healthy vegan mayo that is easy and fast to make.

Ingredients
  

  • 1 cup cashews, raw and unsalted
  • 1 lemon fresh squeezed juice
  • 1 clove garlic
  • 2 TB apple cider vinegar
  • ½ tsp pink himalayan salt
  • pinch pepper
  • 2 tsp dijon mustard
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • ½ cup water

Instructions
 

  • Add all ingredients into a blender and blend until smooth.
  • Pour into a glass jar to store or into a small bowl to serve.
  • Refrigerate for up to 5 days.
