Organic Gluten Free Banana Bread

This recipe is only sweetened with bananas and a small amount of raw honey and contains no refined sugar. This recipe can also be used to make banana muffins.

Ingredients
  

Wet Organic Ingredients

  • 4 large eggs
  • 3 large, very ripe bananas, mashed
  • 1 tbsp vanilla extract
  • 1 tbsp raw honey
  • 3 tbsp coconut oil (or butter)
  • ½ c coconut milk (or milk or choice)
  • 1 tbsp lemon juice

Dry Organic Ingredients

  • c almond flour
  • tsp baking powder
  • ¼ tsp sea salt
  • 1 tsp cinnamon
  • ½ c chopped pecans or walnuts, (optional)

Instructions
 

  • Preheat oven to 350 degrees.
  • Brush lead-free glass bread pan with organic coconut oil very thoroughly.
  • Mix wet ingredients: eggs, bananas, honey, coconut oil, coconut milk, lemon juice, and vanilla extract into bowl and mix well.
  • Combine dry ingredients: almond flour, baking soda, sea salt and cinnamon in a mixing bowl.
  • Combine wet and dry ingredients and stir until well mixed.
  • Pour into prepared bread pan and bake for 35-45 minutes until toothpick comes out clean.
