Organic Gluten Free Banana Bread

Organic Gluten Free Banana Bread
This recipe is only sweetened with bananas and a small amount of raw honey and contains no refined sugar. This recipe can also be used to make banana muffins.
Ingredients
Wet Organic Ingredients
- 4 large eggs
- 3 large, very ripe bananas, mashed
- 1 tbsp vanilla extract
- 1 tbsp raw honey
- 3 tbsp coconut oil (or butter)
- ½ c coconut milk (or milk or choice)
- 1 tbsp lemon juice
Dry Organic Ingredients
- 2¼ c almond flour
- 1½ tsp baking powder
- ¼ tsp sea salt
- 1 tsp cinnamon
- ½ c chopped pecans or walnuts, (optional)
Instructions
- Preheat oven to 350 degrees.
- Brush lead-free glass bread pan with organic coconut oil very thoroughly.
- Mix wet ingredients: eggs, bananas, honey, coconut oil, coconut milk, lemon juice, and vanilla extract into bowl and mix well.
- Combine dry ingredients: almond flour, baking soda, sea salt and cinnamon in a mixing bowl.
- Combine wet and dry ingredients and stir until well mixed.
- Pour into prepared bread pan and bake for 35-45 minutes until toothpick comes out clean.
