Organic Egg Bake with Mushrooms, Tomatoes & Spinach

  • Oven Preheat to 350℉

Ingredients
  

Organic Ingredients

  • 12 organic eggs
  • 1 cup tomatoes, chopped
  • 2 cups baby fresh spinach, chopped
  • 1 cup mushrooms, chopped
  • 2 tbsp olive oil or coconut oil
  • ½ tsp sea salt
  • ¼ tsp pepper (optional)
  • ½ c cheddar cheese, shredded

Instructions
 

Prepare Vegetables

  • Chop mushrooms, spinach and tomatoes.
  • Melt 1 tablespoon of olive oil or coconut oil in pan. Add mushrooms, cover and cook on low. Stir occasionally until tender (about 10 minutes).
  • Add spinach to mushrooms and cover with lid. Cook until spinach is wilted (about two minutes).

Assemble and Bake

  • Whisk together eggs, sea salt and pepper in a large bowl.
  • Brush 9 x 13 baking dish with olive oil or coconut oil on bottom and sides.
  • Add spinach, mushrooms, and tomatoes into egg mixture. Pour into 9x13 baking dish.
  • Bake approximately 40-45 minutes or until cooked throughout.
  • Add shredded cheddar cheese as soon as it comes out of the oven and allow to melt before cutting.
