Chicken, White Bean and Artichoke Stew
A healthy and hearty, one-dish family favorite! If you prefer, chicken can be cooked ahead of time in the oven or crockpot, or simply pick up an organic rotisserie from your favorite grocery to shred and add in.
Ingredients

- ⅓ cup organic dry quinoa (which makes 1 cup cooked quinoa) - optional
- 2 tbsp olive oil or coconut oil
- 2 large boneless, skinless chicken breast
- 1 medium yellow onion, diced
- 3 large carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 48 oz unsalted (or low salt) chicken bone broth, chicken broth or vegetable broth
- 1 can white great northern or cannellini beans
- 12 oz artichoke hearts, frozen
- ¼ cup tomato paste
- 1-2 bay leaves
- ¼ - ½ cup fresh basil, chopped
- 2 tsp thyme or oregano, dried
- 1 tsp sea salt (or to taste)
- 1 tsp pepper (or to taste)
Instructions
Cook Chicken
- Cut boneless chicken into small pieces.Add olive oil (or coconut oil) to pan and cook chicken thoroughly.
Cook Quinoa (if adding)
- Combine ⅓ c dry quinoa with ⅔ c water to small pot and boil.
- After boiling, turn to low heat and cover. Cook for 12-15 minutes, then uncover and let sit for at least 5 minutes.
Cook the vegetables and assemble the soup
- Heat olive oil (or coconut oil) in a large pot, then add onion, carrots, celery and garlic.
- Cook vegetables on medium until onions, carrots and celery begin to soften.
- Add chicken broth, tomato paste, beans, bay leaf, dried thyme or oregano, sea salt, pepper, and chopped basil to the pot. Mix until well combined.
- Add the cooked chicken and let simmer uncovered for 25-30 minutes.
- Add the bag of frozen artichokes to the pot and cook through, about 5-10 minutes.
- OPTIONAL: Add quinoa into soup before serving.
