Organic Egg Bake with Mushrooms, Tomatoes & Spinach

Ingredients
Organic Ingredients
- 12 organic eggs
- 1 cup tomatoes, chopped
- 2 cups baby fresh spinach, chopped
- 1 cup mushrooms, chopped
- 2 tbsp olive oil or coconut oil
- ½ tsp sea salt
- ¼ tsp pepper (optional)
- ½ c cheddar cheese, shredded
Instructions
Prepare Vegetables
- Chop mushrooms, spinach and tomatoes.
- Melt 1 tablespoon of olive oil or coconut oil in pan. Add mushrooms, cover and cook on low. Stir occasionally until tender (about 10 minutes).
- Add spinach to mushrooms and cover with lid. Cook until spinach is wilted (about two minutes).
Assemble and Bake
- Whisk together eggs, sea salt and pepper in a large bowl.
- Brush 9 x 13 baking dish with olive oil or coconut oil on bottom and sides.
- Add spinach, mushrooms, and tomatoes into egg mixture. Pour into 9x13 baking dish.
- Bake approximately 40-45 minutes or until cooked throughout.
- Add shredded cheddar cheese as soon as it comes out of the oven and allow to melt before cutting.
