Almond Date Energy Balls (Gluten Free & Grain Free)
These energy balls are a healthy and energizing dessert for you and your family. The rich, nutty and sweet taste comes from the nuts and the nut butter you choose (almond butter, cashew butter or peanut butter) and the dates.This recipe is quick and easy to make.Vegan, gluten free, free of refined sugar, grain free, soy free, and no bake.
Ingredients
- 1 cup organic raw almonds
- ½ cup raw cashews (or any other nuts you like)
- ½ cup pitted dates (packed down)
- 2 TB almond butter, cashew butter or peanut butter
- ½ tsp ceylon cinnamon
- ¼ tsp pink himalayan salt, or to taste
- ¼ tsp almond extract
- 5 tsp water (or as needed)
Optional Toppings
- shredded coconut
- hemp seed hearts
- flax seeds or flax seed meal
- course ground nuts
- course ground sprouted pumpkin seeds
Instructions
- Add the almonds and cashews (or nuts of your choice) to a food processor and pulse into a course crumb mixture.
- Spoon the nut mixture into a bowl.
- Add the pitted dates into a food processor and pulse until the dates are finely chopped.
- Add the course nut mixture (already pulsed) + almond butter (or cashew butter or peanut butter) + ceylon cinnamon + pink himalayan salt + almond extract + 1 TB water to the dates in the food processor and pulse until the mixture makes a dough.
- Roll out 1 almond energy bar on a piece of unbleached parchment paper. It should easily roll into a ball without being crumbly or dry. If the ball is crumbly, add another 1-2 tsp of water and pulse again until it is moist enough to roll easily.
- Roll out 15 dough balls (a bit smaller than a golf ball). You can make them smaller or bigger depending on the size you prefer. The recipe will make 12 large or 15 medium almond energy balls.
- If you would like to have a topping on the balls, roll the balls in shredded coconut, hemp seed hearts, flax seeds, flax seed meal, course ground nuts, and/or course ground sprouted pumpkin seeds.
- Serve at room temperature or chill the almond energy bars for an hour on a baking sheet to make them more firm.
- Store in a glass, covered storage container in the freezer for up to 3 months.
