Savory Oatmeal
This is an easy, healthy, delicious meal for breakfast, lunch or dinner! You can top this with any type of egg(s), tofu, or beans.
Ingredients
Oatmeal
- 1 TB extra virgin olive oil
- ¼ cup finely chopped shallot (1 small)
- ¾ cup steel cut oats
- 1 garlic clove, pressed
- 2 ¼ cups water
- ½ tsp sea salt
- Freshly ground black pepper
Optional Toppings
- 1 cup fresh spinach, sauteed
- 1 cup sliced mushrooms (fresh or from frozen)
- 1-2 TB scallions, chopped
- 1 avocado sliced (without skin)
- Optional for spice: Sliced jalapenos, pinch of chipotle powder or red pepper spice
Protein Topping Ideas
- 1-2 eggs boiled, poached or cooked any way for each bowl
- ⅔ cup cooked beans
- ⅔ cup tofu, chopped and seasoned
Instructions
- Add olive oil to a small saucepan and heat on medium. Add the chopped shallots and cook until softened, about 2 minutes.
- Add the garlic and oats to the pan and stir, then add water and salt and bring to a boil. Simmer for 15-20 minutes, stirring occasionally, or until oats are thick and creamy.
- Add olive oil, raw spinach and mushrooms to a small pan. Cover with a lid and cook until the mushrooms and spinach are soft, approximately 5-10 minutes.
- Cook your protein choice: eggs, beans or tofu.
- Slice the avocado.
- After the oats are done cooking, pour the oats into 2-3 bowls. Top with sauteed spinach, scallions, avocado slices and your choice of protein.
- Add sea salt, pepper, spices and jalapeno peppers to taste. Optionally, add a squeeze of lemon juice.
