Savory Oatmeal

This is an easy, healthy, delicious meal for breakfast, lunch or dinner! You can top this with any type of egg(s), tofu, or beans.
Servings 2 or 3 people

Ingredients
  

Oatmeal

  • 1 TB extra virgin olive oil
  • ¼ cup finely chopped shallot (1 small)
  • ¾ cup steel cut oats
  • 1 garlic clove, pressed
  • 2 ¼ cups water
  • ½ tsp sea salt
  • Freshly ground black pepper

Optional Toppings

  • 1 cup fresh spinach, sauteed
  • 1 cup sliced mushrooms (fresh or from frozen)
  • 1-2 TB scallions, chopped
  • 1 avocado sliced (without skin)
  • Optional for spice: Sliced jalapenos, pinch of chipotle powder or red pepper spice

Protein Topping Ideas

  • 1-2 eggs boiled, poached or cooked any way for each bowl
  • cup cooked beans
  • cup tofu, chopped and seasoned

Instructions
 

  • Add olive oil to a small saucepan and heat on medium. Add the chopped shallots and cook until softened, about 2 minutes.
  • Add the garlic and oats to the pan and stir, then add water and salt and bring to a boil. Simmer for 15-20 minutes, stirring occasionally, or until oats are thick and creamy.
  • Add olive oil, raw spinach and mushrooms to a small pan. Cover with a lid and cook until the mushrooms and spinach are soft, approximately 5-10 minutes.
  • Cook your protein choice: eggs, beans or tofu.
  • Slice the avocado.
  • After the oats are done cooking, pour the oats into 2-3 bowls. Top with sauteed spinach, scallions, avocado slices and your choice of protein.
  • Add sea salt, pepper, spices and jalapeno peppers to taste. Optionally, add a squeeze of lemon juice.
