Organic Gluten Free (Yeast Free) Sprouted Bread & Buns

This bread is a delicious and healthy option for gluten free (yeast free) organic bread! You can also use this recipe to make 14-18 gluten free buns.
Cheryl has not been able to find healthy organic, gluten free bread at any grocery store. This gluten free, yeast free bread tastes amazing, is very moist and nutritious and is easy and simple to make. It also makes very good sandwich bread that holds together well! You do not need a bread maker for this recipe; all you need is a glass bread pan or baking sheet for buns.

Ingredients
  

Organic Dry Ingredients

  • ½ cup almond flour
  • 1 cup sprouted oat flour
  • cup coconut flour
  • 1 ½ tsp baking soda
  • ½ tsp sea salt
  • 2 TB psyllium husk powder
  • ¼ cup flaxseeds, ground (or flaxseed meal)
  • 1 tsp Everything Blend spice
  • 1 tsp garlic powder
  • 1 TB sprouted pumpkin seeds or sunflower seeds

Organic Wet Ingredients

  • 1 ⅓ cup hot water
  • 5 large eggs
  • 3 TB fresh squeezed lemon juice
  • 1 TB olive oil
  • 1-2 tsp raw honey
  • 1-2 tsp coconut oil for oiling sides and bottom of pan

Organic Spice & Seed Topping

  • 1-2 tsp Everything Blend spice
  • 1-2 TB sprouted pumpkin seeds or sunflower seeds

Instructions
 

Mix Dough

  • Preheat oven to 375 degrees.
  • Brush organic coconut oil around sides and bottom of 8.5 x 4.5 x 2.5 inch lead-free glass bread baking pan (Cheryl prefers Pyrex and Anchor Hocking brands). If you are making buns, brush coconut oil on the bottom of 2 large stainless steel baking sheets.
  • Add all dry ingredients to a large bowl and stir well.
  • In a smaller bowl, whisk the eggs, lemon juice and olive oil.
  • Add the wet ingredients to the dry ingredients and stir until well combined.
  • Boil the water and turn off the heat. Add honey to water and stir until melted.
  • Pour hot water and honey mixture into bread mixture and stir vigorously, batter will get thick and sticky.
  • Let mixture sit for 5 minutes to let the psyllium husk and flax seed meal thicken.
  • If you are making bread, pour the dough into prepared glass bread pan if you are making the bread.

Add Bread Toppings & Bake

  • Top bread with Everything Spice and sprouted pumpkin seeds.
  • Press the pumpkin seeds down slightly to help them stick to the top of the bread.
  • Bake for 50-60 minutes or until a toothpick or skewer comes out clean.

To Make Buns

  • Use a ¼ cup measuring cup to scoop dough balls onto baking sheets and flatten them with a spoon.
  • Sprinkle Everything Blend spice on top of the buns.
  • Bake for 34-36 minutes or until a toothpick comes out clean.

Cool the Bread (or Buns)

  • Cool the bread in the bread pan (or buns on the baking sheet) for 10-15 minutes.
  • Use a knife to cut around the edges of the bread pan to loosen the bread from the pan.
  • Transfer the loaf of bread (or buns) to a cooling rack and cool for at least 1 hour.
  • Slice the bread and place the bread slices back into the glass baking pan for storing the bread. See the NOTES section for information about the brand of bread cutter that Cheryl prefers and uses.

Storing Bread & Buns

  • Cover the bread with parchment paper and then plastic wrap and store the bread in the refrigerator or freezer, unless you will be eating them right away.
  • For buns, place the buns in a large glass Pyrex storage container and separate each layer of buns with parchment paper.
