Organic Gluten Free Vegan Cinnamon Raisin Bread

This vegan cinnamon raisin bread is made with many nourishing ingredients including gluten free flours, coconut oil, raisins, nuts and cinnamon. This is simple to make and is baked in a bread pan.
This bread does not contain any refined sugar and is naturally sweetened with ripe bananas, raisins, and maple syrup. This bread is moist and delicious and has a very mild sweet taste. You can optionally add ¼ to ½ cup more raisins or 1-2 TB additional maple syrup if you would like the bread to taste sweeter. Optionally, the recipe also has an option to make this bread with whole milk and add 2 eggs for more protein and healthy fat.

Ingredients
  

Organic Dry Ingredients

  • 2 ¼ cups gluten free oat flour (can use ground whole oats)
  • ½ cup almond flour
  • 2 ½ tsp Ceylon cinnamon
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp himalayan pink salt
  • ½ cup raisins
  • ¾ cup walnuts or pecans, chopped

Organic Wet Ingredients

  • ¾ cup water
  • ½ cup + 2 TB coconut milk (or any other milk)
  • 3 TB melted coconut oil
  • ½ cup ripe banana, mashed
  • 2 TB maple syrup
  • 1 tsp pure vanilla extract

Eggs

  • 2 flax seed eggs: 2 TB ground flax seeds + 6 TB warm water mixed
  • OR 2 whole eggs (whisked)

Instructions
 

  • Preheat oven to 350℉.
  • Oil bottom and sides of bread pan very well with melted coconut oil using a pastry brush.
  • Add all dry ingredients into a large mixing bowl (except raisins and nuts): oat flour (you can make this by grinding whole oats in the food processor), almond flour, cinnamon, baking soda, baking powder and salt.
  • In a small bowl, add 2 TB ground flax seeds + 6 TB warm water and allow to gel for 5 minutes. Alternatively, you can use 2 large whole eggs instead of flax seeds with water and add the eggs to the wet ingredients in the next step.
  • Add all wet ingredients into a medium mixing bowl: water, milk, coconut oil, mashed banana, maple syrup and vanilla extract (and 2 eggs if you are using eggs instead of flax seeds with water). Whisk until well mixed. The batter will get thicker within a few minutes.
  • Add the wet ingredients into the large bowl with the dry ingredients and mix together well. If you are using flax seeds (instead of eggs), then also add the flax seed + water mixture into the dry and wet ingredients.
  • Stir in raisins and walnuts or pecans.
  • Pour batter into well oiled bread pan. Optionally, sprinkle chopped walnuts or pecans on top.
  • Bake for 45-55 minutes in oven. Insert a toothpick to see if the bread is cooked throughout.
  • Cool the bread in the pan for 5-10 minutes. Use a knife to cut around the outside edge of the bread to help the bread come easily out of the pan.
  • Place the bread on a cooling rack for at least 2 hours before cutting the bread because the bread is very crumbly if you cut it before it cools off.
  • Slice the bread and place the bread back into the baking pan. Store the bread in the refrigerator for up to 1 week or keep it in freezer and thaw or toast before eating.
