Oat & Nut Energy Bites

These energy balls are full of nutritious ingredients that will nourish you and your family. Recommended as a healthy dessert or part of a post exercise meal.
Servings 30 to 40 energy balls

Ingredients
  

  • 1 cup raw sprouted organic oats
  • ½ cup pecans, chopped
  • ½ cup walnuts or almonds chopped
  • ½ cup dates, pitted (pureed)
  • cup organic peanut butter, almond butter or cashew butter
  • cup shredded coconut flakes
  • 2 TB flaxseed meal (or flaxseeds ground in coffee grinder)
  • 1 TB chia seeds
  • 1 TB hemp seeds
  • 2 TB raw cacao nibs (optional)
  • 1 tsp organic ceylon cinnamon
  • tsp pink himalayan salt
  • cup shredded coconut flakes, flax seeds, sesame seeds, or sunflower seeds to roll on the outside (optional)

Instructions
 

  • Add ½ cup of raw, dry oats into a food processor and pulse for a few seconds to make the oat pieces smaller. Then add to a large bowl.
  • Add remaining ½ cup of dry oats (whole) into the large bowl.
  • Add ½ cup of pecans and ½ cup of walnuts (or almonds) to a food processor and pulse for a few seconds until the nuts are chopped into smaller pieces. Then add into the large bowl.
  • Add pitted dates into the food processor and blend until smooth. Then add to the large bowl.
  • Add ground flaxseed, cinnamon, himalayan salt, peanut butter (or almond or cashew butter), ⅓ cup shredded coconut flakes, cacao nibs, chia seeds and hemp seeds to the large bowl.
  • Mix all of the ingredients very well.
  • Roll the oat mixture into tablespoon size balls and then (optionally) roll in shredded coconut, sesame seeds, flax seeds or sunflower seeds.
  • Store the Oat & Nut Energy bites in a glass Pyrex storage container and separate layers with unbleached parchment paper. Store in the refrigerator for up to a week. Freezer Option: You can store the Oat & Nut Energy bites in the freezer for up to 3 months. Thaw to room temperature before serving.
