Mixed Greens Garden Salad with Caesar Dressing
This is a simple salad that is quick to make for lunch for dinner or as a side salad. You can add your protein(s) of choice, like beans, cheese, chicken or turkey. Makes 2 salads.
Ingredients
Organic Vegetables
- 2 ½ cups mixed greens (or more for larger salads)
- 10 grape tomatoes (cut in half)
- 4-5 radishes, sliced
- 1 medium carrot, chopped
- 2 TB green onions, chopped
- 3-4 leaves fresh basil, chopped
- 1-2 TB fermented veggies (kraut)
Protein & Topping Ideas
- ½ cup black beans, drained and rinsed (or beans of your choice)
- 4-8 oz sliced turkey or chicken
- ¼ cup shredded cheese (or cheese of your choice)
- 2 TB sprouted sunflower seeds
Vegan Caesar Dressing (or any dressing of your choice)
Instructions
Prepare Salads
- Add mixed greens to fill 2 serving bowls.
- Chop grape tomatoes, radishes, carrots, green onions and basil and add to each salad bowl.
- Add your protein(s) of choice: beans, sliced turkey or chicken, or any other protein of your choice.
- Optional: Shred cheddar cheese and add to each salad.
- Add sunflower seeds as topping.
