Mexican Street Corn Salad
Mexican Street Corn Salad
Easy Mexican street corn salad is a wonderful side dish or dip! This healthy version is creamy, spicy and delicious! Cheryl made this for a football tailgate and it was enjoyed by many! This recipe can be made vegan by omitting the cheese and using homemade cashew mayo.
Ingredients
- 5 cups frozen corn, cooked
- ¼ cup healthy mayo (Primal Kitchen brand or see homemade Vegan Cashew Mayo recipe link in Notes section)
- 3 cloves garlic, crushed
- 2 limes fresh squeezed juice
- ½ cup + 2 TB crumbled Cotija or Feta cheese (from cow or sheep milk)
- ⅓ cup scallions, chopped
- 2-4 TB fresh cilantro, finely chopped
- 1-2 jalapeno peppers, diced (depending on preferred spice)
- heaping ½ tsp smoked paprika
- ½ tsp pink himalayan salt
Instructions
- Cook frozen corn in pot with 1" of water, until tender. Drain and refrigerate.
- In a large bowl, add the mayo, crushed garlic, lime juice, crumbled cheese, chopped scallions, chopped cilantro, chopped jalapeno peppers, smoked paprika and sea salt and mix well.
- Add the cooled corn and stir well. Add any additional desired seasonings.
- Serve immediately or refrigerate until ready to serve.
- Serve as a side or with organic corn tortilla chips.

Tortilla chips are commonly made with genetically modified corn, unhealthy vegetable oil, and unhealthy refined salt. Protect your health by choosing organic corn tortilla chips made with avocado oil (NOT safflower oil, soybean oil or canola oil). Organic tortilla chips, made with healthy ingredients, are very challenging to find at the store.
Siete Maiz Totopos Organic Tortilla Chips - Cheryl has not tried these chips but they are made with organic ground corn, avocado oil (a healthy oil) and sea salt.
MiNina Organic Tortilla Chips - Available in many locations
These chips are made with certified organic NON-GMO white corn, certified organic sunflower oil, sea salt, and trace of lime. Cheryl found the MiNina brand tortilla chips at her local Whole Foods. If you cannot find the Siete Maiz Totopos brand of tortilla chips, this is the next best option.
