Mediterranean Salad with Balsamic Vinaigrette
This nourishing salad and dressing is very simple and easy to make. You can make this with balsamic vinaigrette or with any dressing of your choice!
Ingredients
- 2 romaine hearts, chopped
- ½ cup tomatoes, diced
- ½ cup cucumbers, diced
- 2 thin slices of red onions
- ¼ cup kalamata olives, pitted
- ¼ cup feta cheese
- 1 TB fresh basil, chopped
Protein Topping Ideas
- 1 cup chickpeas, drained and rinsed
- 6 oz chicken breast, cooked and sliced
Balsamic Vinaigrette
- ⅓ cup olive oil
- ⅓ cup balsamic vinegar
- 2 garlic cloves, fresh pressed
- 1 tsp rosemary or thyme (or both)
- ⅛ tsp himalayan pink salt
- pinch smoked paprika
- pinch pepper
Instructions
Prepare the Salad
- Wash and chop all of the vegetables.
- Add the lettuce into 2 separate bowls and top each salad with tomatoes, cucumber, and red onions.
- Drain the olives and chickpeas and add on top of each salad.
- Add the feta cheese.
- If adding chicken, add the cooked, sliced chicken on top of each salad.
Prepare the Salad Dressing
- Mix all of the salad dressing ingredients into a salad dressing container or ball glass jar. Cover and shake well.
- Add salad dressing to each salad.
