Gluten Free Avocado Toast
Delicious and nutritious avocado toast with eggs, tomatoes and/or cucumbers on home made gluten free bread. Nourishing gluten free bread recipe also included.
Ingredients
- 1 piece gluten free bread, toasted (recipe link included)
- ½ large avocado, smashed
- 1 tsp fresh squeezed lemon juice
Optional Toppings
- 1 egg (hard boiled, over medium, or poached)
- 1 tomato, sliced
- 1 cucumber, sliced
- sea salt and pepper, to taste
Instructions
Prepare Ingredients
- Cut ripe avocado in half and scoop out the avocado into a bowl and smash it with a fork. Add a small amount of fresh squeezed lemon juice.
- If you are adding egg as a topping, cook 1 egg in a pan (over easy) or in a pot of water (hard boiled or poached).
- Slice tomatoes and/or cucumbers, or any other topping that you enjoy.
- Toast 1 piece of bread in toaster.
Assemble Avocado Toast Sandwich
- Add smashed avocado on top of the toasted bread.
- Top with 1 egg, tomato slices, and/or cucumber slices (or any other veggies), sea salt and pepper.
