Gluten Free Avocado Toast

Delicious and nutritious avocado toast with eggs, tomatoes and/or cucumbers on home made gluten free bread. Nourishing gluten free bread recipe also included.
Prep Time 15 minutes

Ingredients
  

  • 1 piece gluten free bread, toasted (recipe link included)
  • ½ large avocado, smashed
  • 1 tsp fresh squeezed lemon juice

Optional Toppings

  • 1 egg (hard boiled, over medium, or poached)
  • 1 tomato, sliced
  • 1 cucumber, sliced
  • sea salt and pepper, to taste

Instructions
 

Prepare Ingredients

  • Cut ripe avocado in half and scoop out the avocado into a bowl and smash it with a fork. Add a small amount of fresh squeezed lemon juice.
  • If you are adding egg as a topping, cook 1 egg in a pan (over easy) or in a pot of water (hard boiled or poached).
  • Slice tomatoes and/or cucumbers, or any other topping that you enjoy.
  • Toast 1 piece of bread in toaster.

Assemble Avocado Toast Sandwich

  • Add smashed avocado on top of the toasted bread.
  • Top with 1 egg, tomato slices, and/or cucumber slices (or any other veggies), sea salt and pepper.
