Delicious Gluten Free Flatbread Veggie Pizza (& Yeast Free)
This gluten free and yeast free pizza is nourishing and easy to make and the crust is baked in a frying pan (like pancakes) to make it quickly. Add the toppings and bake in the oven or on the grill for 10-15 minutes until all the toppings are hot and the cheese is melted.Cheryl has not found any healthy organic pizza crust at any grocery store. This recipe is gluten free and yeast free and is simple and fast to make. Cheryl prefers not to use gluten free baking flour made with rice flour or potato flour, but instead prefers using nourishing gluten free flours like oat flour, almond flour, millet flour, or coconut flour that provides good nutrition.This recipe makes six 7" x 5" small flatbread pizzas that you can make as an appetizer or as part of a meal. This pizza pairs wonderfully with a nourishing salad to make a wonderful, healthy meal! Ingredients
Dry Ingredients
- ¾ cup organic almond flour
- 1¼ cup oat flour (or use dry sprouted oats to make oat flour)
- 1 TB + 1 tsp arrow root flour
- ¼ tsp pink himalayan salt or sea salt
- ½ tsp baking soda
- 1 TB Italian seasoning
- 1 tsp Everything Blend spice
Wet Ingredients
- 2 large eggs, whisked
- 1 cup milk (or vegan milk)
Instructions
- You can bake the pizza on a grill or in the oven. If you will be using the oven, set temperature to 400 degrees F.
Mix the Flatbread Dough
- If you would like to use whole sprouted oats to make the oat flour, then add dry sprouted oats to a food processor and blend until smooth.
- Add all dry ingredients into a large bowl and mix well.
- Add eggs into a small bowl and whisk, then add milk and mix well.
- Add the wet ingredients into the dry ingredients and stir well.
- Let sit for 5 minutes to thicken.
Make the Flatbread in Pan (Like Pancakes)
- Brush ghee, coconut oil or butter on a large frying pan.
- Using a spoon, make the mini flatbread pizza crust by spooning the dough into the large pan and spread it out with a spoon to make thin crust (like you would make a pancake).
- Turn the flame on low/medium and cook until one side is done, then flip to the other side (like you would pancakes).
- Cook the flatbread crusts until they are cooked all the way through, then place on a pizza pan.
- Add pizza sauce (or pasta sauce) onto each flatbread.
- For Mushroom Veggie Pizza, add thinly sliced red onions, mushrooms, and broccoli and shredded cheese on top of the flatbread.
- For Margarita Pizza, add basil, sliced tomatoes and shredded cheese on top of the flatbread.
- For a pizza with toppings of your choice, add pizza or pasta sauce to the flatbreads and add any toppings of your choice.
- Cook in oven or grill until toppings are hot and cheese is melted, approximately 10-15 minutes.
Freeze Leftover Flatbread Pizzas
- Add the pizza or pasta sauce and all of your preferred toppings on all of the flatbreads.
- Place unbleached parchment paper in the bottom of a large glass Pyrex storage container. Place the flatbreads in the storage container and separate using parchment paper.
- Freeze in freezer for 1-2 months.
- Bake in oven or on grill when ready to eat the leftover flatbread pizza!
