Gluten Free Sprouted Buns
These buns are a delicious and healthy option for gluten free (yeast free) organic buns! This recipe to make 14-18 buns. Cheryl has not been able to find healthy organic, gluten free buns at any grocery store. These gluten free, yeast free buns taste amazing, and are very moist and nutritious and the recipe is easy and simple to make. If you do not already have these ingredients, you can see the INGREDIENT BRANDS THAT CHERYL PREFERS in the Notes Section.
Ingredients
Organic Dry Ingredients
- ½ cup almond flour
- 1 cup sprouted oat flour
- ⅓ cup coconut flour
- 1 ½ tsp baking soda
- 2 TB psyllium husk powder
- ¼ cup flaxseeds, ground (or flaxseed meal)
- 1 tsp Everything Blend spice
- 1 tsp garlic powder
- 1 TB sprouted pumpkin seeds or sunflower seeds
Organic Wet Ingredients
- 1 ⅓ cup hot water
- 5 large eggs
- 3 TB fresh squeezed lemon juice
- 1 TB olive oil
- 1-2 tsp raw honey
- 1-2 tsp coconut oil to brush on bottom of baking pans
Organic Spice & Seed Topping
- 1-2 tsp Everything Blend spice
- 1-2 TB sprouted pumpkin seeds or sunflower seeds
Instructions
Mix Dough & Bake
- Preheat oven to 375 degrees.
- Brush organic coconut oil on the bottom of 2 large stainless steel baking sheets.
- Add all dry ingredients to a large bowl and stir.
- In a smaller bowl, whisk the eggs, lemon juice and olive oil.
- Add the wet ingredients to the dry ingredients and stir until well combined.
- Boil the water and then turn off the heat. Add the raw honey to the hot water and stir until melted.
- Pour the hot water and honey mixture into the bread mixture and stir vigorously; the batter will get thick and sticky.
- Let the mixture sit for 5 minutes to let the psyllium husk and flaxseed meal thicken.
- Use a ¼ or ⅓ cup measuring cup to scoop out the dough onto the baking sheet for each bun, depending on the size bun you would like. Flatten each bun with the bottom of a spoon.
- Sprinkle Everything Blend spice on top of the buns. You can also add sprouted pumpkin seeds or sunflower seeds if you would like. Press the pumpkin seeds or sunflower seeds down slightly so that they will stick to the buns.
- Bake for 34-36 minutes or until a toothpick comes out clean.
Cool the Buns & Store
- Cool the buns on a baking rack for 10-15 minutes.
- Store the buns in the refrigerator or freezer in a glass Pyrex storage container with a lid.
- To freeze, separate each layer of buns with parchment paper and cover with a lid.
